

Irish Cheddar and Potato Gratin
This cheesy combination is a delicious dish to serve at the holiday table. Pass the potatoes!

Ingredients
- 4 lbs. russet potatoes, washed and thinly sliced (soak in water to prevent browning)
- 2½ cups Irish cheddar, grated
- 1½ cups heavy cream
- ½ onion, diced
- 1 tsp. thyme, minced
- ¼ lb. bacon, crumbled (optional)
- 1 bunch scallions, chopped (optional)
Directions
Preheat oven to 375°
Butter a square baking dish. Layer 1 pound of the sliced potatoes in the pan. Next, add ¼ cup of grated Irish Cheddar. Repeat until all potatoes and cheese are used.
In a medium saucepan, sautƩ onions, then add the heavy cream and thyme. When warmed, pour over the potatoes.
Place in the oven and bake for an hour until the potatoes are tender and cheese bubbly.
Top with bacon and scallions if desired.
